Mika's Faux-Thai Stir-fry
This sounds like a lot of work at first, but it is actually quite fast and easy. The only cutting you'll do is the broccoli and smoked tofu.
- 1 tsp cooking oil of choice
- 220 g/1 packet of smoked tofu (I like Cauldron Beech Smoked)
- 1 packet of pre-cooked wok-ready noodles
- 1 can of coconut milk plus 1 cup water OR 100 g (half a 200 g packet) of solid creamed coconut (the cheaper option that tastes the same) plus 2 cups water
- boiling water from the kettle
- 3 heaped teaspoons of Thai red curry paste (I like Amoy) - but be careful! A lot of Thai curry pastes have fish sauce in them!
- 1-2 cups of fresh bean sprouts or 1 small can of bean sprouts (drained), to taste
- 1 small head of broccoli
- mix of oriental vegetables like mangetout, bamboo shoots, baby carrots - you can get any and all of these canned or fresh or even frozen. None of it requires cutting up. Throw it in whole after washing!
First wash off broccoli and cut into small to medium sized florets. Put these into a steamer basket on top of a pan with a little water in it. Put the pan on high heat to boil the water and steam the broccoli. Putting a lid on the steamer basket makes it happen even faster. It only takes 5 minutes. Heat the oil in a large and deep frying pan or wok. Chop up the tofu into small pieces. Throw them into the frying pan. While that heats up, open the cans of oriental veggies and drain or wash the fresh oriental veggies and then throw them in and mix 'em around.
Now open the can of coconut milk and mix in 3 heaped teaspoons or more of the red curry paste OR, if using the solid creamed coconut, cut the 200 g. packet in half and dissolve in a bowl with 2 cups of boiling water from the kettle. Then mix in 3 teaspoons of red curry paste. Pour all of this into the wok and add a cup of water if you're using the canned coconut milk. Check that the broccoli in the steamer basket is dark green. If so, it's ready - tip it directly into the wok and stir thoroughly. Open the packet of pre-cooked wok-ready noodles and dump in. Turn the heat down to a simmer and let everything cook for about 10 minutes.
