Halloumi & Spiced Leeks
Halloumi is a firm mild cheese that doesn't melt when cooked. You can find it in Middle Eastern food stores.
- 1.5 lbs of tender young leeks or 3 large leeks
- 8 oz. halloumi cheese
- 2 tbsp olive oil
- 1 tsp ground cumin seeds
- juice of 2 small or 1 large lime(s)
- salt and black pepper
Slice the leeks fairly finely.
Cut the cheese into slices about 1/3rd inch thick and then cut each slice in half. Heat the oil in a skillet and put the cheese in, frying for 2-3 minutes on high until golden on one side. Flip the pieces over and fry on the other side. Then remove with a slotted spoon and leave to the side to drain on paper towels.
Put the leeks into the skillet and stir-fry for about 5 minutes or until they are just tender. Add the cumin seeds and stir for another minute. Add the lime juice and the seasoning. Then put the cheese back into the skillet and stir-fry for another minute or two. Serve with couscous and brown bread, bread and a pre-made green salad or another vegetable side-dish, as this dish is quite light for dinner.
